I'm crazy about the Cartel! You guys are all just awesome. The thing that struck me the most and translated to each dining experience was the sense of community and integrity. It is clear that you really work to create an experience that is true to the wholeness and sensual experience of food, the care of the environment, and the enjoyable, relational experience of your guests - and that you know that this work is a perpetual creative project that needs a well spring of love for what you do. I also love the fact that I can never truly "leave" the "family." Thank you from the bottom of my heart for attending so kindly, thoughtfully, and thoroughly to my personal food allergies. I know that cooking without certain main ingredients is a major challenge, and there were many dishes that hit the ball out of the park for me.
