Veggie Pot Stickers

 

FILLING INGREDIENTS

  • 1 head of napa cabbage
  • 4 cups chopped cremini mushrooms
  • 2 red onions
  • 4 in. piece of ginger
  • 2 tbsp. garlic
  • 4 tbsp. soy sauce
  • ½ cup chili garlic sauce
  • 2 tbsp. lime juice
  • 2 cups white beans puréed

SAUCE INGREDIENTS

  • 1 quart chili garlic sauce
  • 2.5 oz soy
  • 1 in. piece of ginger
  • 4 cloves of garlic
  • 1.5 bunches of cilantro with stems
  • 1 btl. yellow mustard
  • Juice from 1 lime
  • Sriracha, to taste

Filling: Grate the first 6 ingredients and place in a sauté pan over medium heat for 3 min. Then, in order, add the remaining ingredients; heat for 2 more min.

Sauce: Put in a sauté pan and reduce by ¼, remove from heat, let cool. •  Place 1 tbsp. filling into each wonton wrapper, brush corners with water and fold over. In a hot sauté pan, heat 2 tbsp. olive oil until hot and place pot stickers in pan. Cook for 3 min. Flip pot stickers and add 1 cup sauce. Once sauce is hot take off heat, plate and serve.
